1. Purpose of the Role
To mix and serve alcoholic and non-alcoholic beverages to customers.

2. Key Responsibilities
2.1. Stock Control

  • Organise glasses, utensils, and bar equipment neatly.
  • Maintain bar displays.
  • Record levels and quantities of stock at the end of each shift.
  • Conduct the weekly stocktakes.
  • Balance stock levels with daily sales; investigate and report shortfalls.
  • Ensure stock levels for all beverages, glassware, and related supplies, are maintained and place orders for replenishment stock as required.
  • Safeguard the stock on hand.

2.2. Payment Transaction Recording and Cash Register Management

  • Collect the correct amount of cash for beverages served.
  • Balance and reconcile cash receipts and cash register amounts.
  • Record opening and closing amounts of cash in the register.

2.3. Bartending

  • Mix ingredients to prepare cocktails and other drinks.
  • Prepare and serve alcoholic and non-alcoholic drinks.
  • Serve snacks or other food items to customers at the bar.
  • Clean and maintain the bar area.

2.4. Health and Safety Compliance

  • Within the area of responsibility, ensure the bar and its operations comply with all relevant health, safety and environmental requirements.
  • Ensure that hygiene standards are maintained in accordance with SOP’s.
  • Ensure that housekeeping is done properly (i.e. within area of responsibility that the working surfaces and utensils are properly washed and sanitised and rubbish is removed).

2.5. Customer Service

  • Take beverage orders from serving staff or directly from patrons.
  • Deal with beverage or bar related customer queries.
  • Limit problems and liability related to customers by taking necessary actions, particularly with intoxicated customers who behave irresponsibly.

2.6. Effective Teamwork and Self-Management

  • Take ownership and accountability for tasks and activities and demonstrate effective self-management in terms of planning and prioritising, and self-development.
  • Follow through to ensure that quality and productivity standards of work are consistently and accurately maintained.
  • Inform relevant parties in the event of tasks or deadlines not met, the potential risks thereof and provide appropriate resolution.
  • Manage colleagues’ expectations and communicate appropriately.
  • Demonstrate willingness to help others and “go the extra mile” to meet team targets and objectives.

QUALIFICATION AND EXPERIENCE

  • Minimum grade 12 or equivalent qualification
  • At least 3 years’ experience as a bartender
